Cilantro Lime Rice
Here is a copycat recipe of Chipolte's cilantro rice. This is easy to prepare and goes great with most Mexican dishes. I like to use jasmine rice in this recipe, b/c it's lighter and fluffier than regular long-grain rice.
Ingredients:
Makes 4 servings
1 1/2 cups jasmine rice
2 cups water
1 tablespoon olive oil
2 tablespoons fresh lime juice
3 tablespoons chopped fresh cilantro
salt to taste
Bring the water to a boil in a saucepan over high heat. Add the rice, salt and oil and return to a boil. Boil for 1 minute. Reduce heat to low, cover, and simmer until the rice is tender, 20 minutes. Remove from the heat, add the lime juice, cilantro, ; fluff with a fork and serve.
