Caprese Salad

I picked up these great tomatoes at the farmers market yesterday. I also have an over abundance of basil growing on my patio, so the only logical thing to do was make this wonderful salad. Insalata caprese is such a perfect summer salad...I could eat this every day!

1 large tomato, sliced into 8 slices
8 oz fresh mozzarella, sliced into 8 slices
5-6 basil leaves, sliced or left whole
2 tsp extra virgin olive oil
2 tsp balsamic vinegar
sea salt and fresh pepper

Place sliced mozzarella on a large plate or platter. Top with tomato and basil. Mix olive oil and vinegar, then drizzle over salad. Season to taste with salt and pepper.
