Kitchen Fail!

Aack! It's been almost an entire week since my last post....sorry about that. I wish I was one of those bloggers that could post something everyday but sadly I don't think that will be happening anytime soon. For starters, I'm usually running behind schedule by 9:30AM...ughh :( I try to fit in my blogging during down time, but with two young kids that's not usually till late at night. Also, there are many times that I try new recipes and they just don't come out that great.

So today, I thought I would share with you some of those dishes. Now don't let the pretty pictures fool you....these recipes were really not "blog worthy".

Mexican Rice- This side dish wasn't completely bad. In fact, I plan to try it again and with a little tweaking it could be great. My husband wasn't a fan at all though and found it too mushy.


Lemon Honey Herb Dressing- I have a large pot of parsley outside on my patio that will produce till mid December. I was excited when I found this dressing in Southern Living magazine to help me use some of it up. The dressing had no zip to it though :(


Coconut Shrimp with Spicy Mango Salsa- I found this recipe for baked coconut shrimp with a slightly spicy mango salsa in last month's Rachel Ray magazine. However there is a reason why most coconut shrimp recipes call for frying...the baking just produced bland/coconutty shrimp.


Crab Cakes- When jumbo lump crab meat was on sale last month at the grocery store, I immediately started looking up recipes for crab cakes. I decided to go with the Cook's Illustrated version which seemed to be just perfect. I'm not sure what went wrong, but I really did not care for them and I normally LOVE crab cakes. They don't even think they look right in the picture.


Sweet and Sour Crockpot Meatballs- I thought this would be a dish the kids would just love, but they didn't and told me so accordingly. I can't blame them, I had two bites and decided to just eat the rice for dinner that night.

  2. You're right, the pictures are sure pretty!! I've had more than my fair share of those dinners, look good, taste like poo. And LOL about not being blog worthy, I say things like that too :)

  3. I was thinking the crab cakes looked pretty good, too! I tried a crockpot recipe tonight from that site I mentioned: crockpot365 ... Brown Sugar Chicken. Ugh. It wasnt inedible; it just wasn't what I hoped it would be :( You wouldn't think amything could make a chicken thigh come out dry and almost powdery(?!), especially when cooked in a sauce, but it sure did! Again - the flavor wasn't bad. Just not worth a repeat, I'm afraid. I feel your pain, honey.
