Weight Watchers 0 PTs Vegtable Soup


If you have ever done Weight Watchers this soup will look very familiar to you. I am not doing Weight Watchers now(I have in the past) but decided to whip up this soup because I am trying to eat better and detox from the holidays. And this is about as healthy as you can get! Plus, it was FREEZING this weekend and I needed something hot for lunch.

This soup is easy to make but note that it has a lot of veggies so plan some time for prep work. However, you can always make a large batch and then divide into 1 1/2 cup portions (those little plastic Ziploc containers work great for this), and store them in the fridge or freezer.

This soup is so great if you are watching your weight! It’s yummy, easy to make, and has ZERO POINTS!!!

Ingredients:
2/3 cup sliced carrots
1/2 cup diced onions
2 garlic cloves, minced
3 cups fat-free broth (beef, chicken, or vegetable)I used chicken
1 1/2 cups diced green cabbage
1/2 cup green beans
1 tbsp. tomato paste
1/2 tsp. dried basil
1/4 tsp. dried oregano
1/4 tsp. salt
1/2 cup diced zucchini

In a large saucepan sprayed with nonstick cooking spray, sauté carrots, onions and garlic over low heat for about 5-10 minutes. Add broth, cabbage, green beans, tomato paste, basil, oregano and salt, and bring to a boil. Add the zucchini. Lower the heat, cover, and simmer for around 15 minutes or until beans are tender. Enjoy!!
