I made my kids very happy last Saturday night when I took them to IHOP for dinner ( my husband was out of town and I really didn't feel like cooking). They loved having breakfast for dinner and got such a kick out of the silly "create-a-face" pancakes. So, for Monday's lunch, I decided to treat them with my version of this fun meal.
This homemade version is also a bit healthier than IHOP's. Theirs features one very large pancake with lots of Cool Whip and sugar syrup coated fruit. I used my favorite whole wheat buttermilk pancake recipe, fresh whipped cream, a variety of fruit and lean bacon. The kids loved this version just as much as the one from IHOP, if not more!!
I think these are a perfect way to do something special for the kids on those relaxed weekend breakfasts...or lunches...or even dinner:)

Coincidentally, it was "pajama day" at school in the morning. So, it was fitting that he had pancakes for lunch.

My daughter was just happy to dig in!
Ingredients:
pancake batter (homemade or pre-made)
fresh whipped cream, Cool Whip or yogurt
assorted fruit, rinsed and sliced (bananas, strawberries, blueberries, raspberries, blackberries, etc.)
lean bacon or taylor ham, cooked
Heat a large, nonstick skillet and spray with cooking spray. Add prepared pancake batter (about 1/2 cup for 1 large pancake) and let the pancake cook till edges become firm. Flip pancake and cook for a few additional minutes. Remove from skillet to a plate and decorate with the whipped cream, fruit and bacon. Serve with a pat of butter and syrup on the side if desired.
