Slow Cooker: Mushroom Chicken (#2)


OK folks, here it is the recipe for that other slow cooker mushroom chicken. This is probably coming at good time too, since I know most of us are looking for quick, fix-it and forget dinners after all that holiday cooking we've been doing.

This recipe really fits the bill but you may be wondering what the big difference is between mushroom chicken #1 and #2. Mushroom chicken #2 starts with cubed chicken. It also does not use any "cream of ____" soup, which a lot of folks prefer to do without (me, I'm OK with it once in a while).


So the other big question....Which was my favorite? I honestly don't know. I made this one some time ago, so it's hard to compare the two but they were BOTH great. I don't think you could go wrong with either recipe. Enjoy!

Ingredients:

1 tsp. salt
1/2 tsp pepper
1/4 tsp paprika
3 boneless,skinless chicken breasts cut into cubes
1/2 cup green onions, sliced
1 1/2 cups sliced mushrooms
1 3/4 tsp chicken bouillon granuales
1 cup dry white wine
1/2 water
1 can evaporated milk (5oz)
5 tsp cornstarch

Directions:

1. Combine salt, pepper and paprika in small bowl; sprinkle over chicken

2. Layer chicken, mushrooms, green onions and bouillon in a 4 1/2-quart slow-cooker. Pour wine, water over top. Cover and cook on high for 3 hours or 5-6 hours on low. Transfer chiken and vegtables to platter; cover with foil to keep warm.

3. Combine evaportaed milk and corn strach in small pan, stir until smooth. Add 2 cups of cooking liquid from slow-cooker; bring to a boil. Boil for 1 minute or until thick, stiring constantly. Serve over chicken.

I served this over brocolli rice.

Slow Cooker: Mushroom Chicken (#1)


A few weeks ago, I posted about a great slow cooker mushroom chicken recipe I had made. I actually have two different slow cooker mushroom chicken recipes to share. This first recipe, I made more recently and really loved it. The mushroom gravy was soooo delicious!! I could have eaten that by itself-Ha!

While dinner cooked in the slow cooker, I took the kids out for a long bike/scooter ride. They sure worked up an appetite!



I served this over mashed potatoes and sauteed spinach (Pictured here with a salad. These are actually my leftovers). This dinner was so easy to prepare and so were the sides. I used Oreida Steam n' Mash potatoes. To make them extra creamy and yummy, prepare the potatoes according to directions on the bag and then add 4oz of onion and chive cream cheese. For the spinach, simply sautee in large pan with a little butter,olive oil and garlic. So good, so easy!



Ingredients:

4 skinless, boneless chicken breast halves (about 1-1/2 pounds)
1 8-oz. pkg. fresh button mushrooms, quartered
1 6-oz. pkg. fresh shiitake mushrooms, stems removed, caps sliced
1/4 cup butter
1 0.7-oz. pkg. Italian dry salad dressing mix
1 10-3/4-oz. can condensed golden mushroom soup
1/2 cup dry white wine
1/2 of an 8-oz. tub cream cheese spread with chives and onion

Directions:

Melt butter in a saucepan. Then add the salad dressing mix. Stir in soup, wine and cream cheese until it combines and melts. Add all the mushrooms to your slow cooker. Place chicken on top and pour sauce over chicken. Place lid on slow cooker and cook on low for 5 hours. Serve over rice, pasta or mashed potatoes.

Buffalo Chicken Dip


My daughter has a typical picky preschooler palette but my six year old is the complete opposite. He is quite adventures with foods. He's been know to order salmon instead of chicken fingers at restaurants, enthusiastically tries all ethnic foods and recently fell in love with spicy Buffalo wings.

He loved when I made these for a Super Bowl party. Of course, I can't make Buffalo wings all the time (plus, cutting apart the wings is not exactly my idea of fun) so I decided to make him this (new) classic Buffalo style dip.


Serve it up with crisp celery, carrots or tortilla chips...your guests will love it!

Ingredients:

2 cups shredded or chopped,cooked chicken
2 (8 ounce) packages cream cheese, softened
1 cup Ranch dressing
3/4 cup pepper sauce (such as Frank's Red Hot®)
1 1/2 cups shredded Cheddar cheese
2 Tbsp blue cheese crumbles

Directions:

Heat chicken and hot sauce in a skillet over medium heat, until heated through. Stir in cream cheese and ranch dressing. Cook, stirring until well blended and warm. Mix in half of the shredded cheese, and transfer the mixture to a slow cooker. Sprinkle the remaining cheese over the top, cover, and cook on Low setting until hot and bubbly. Serve with crumbled blue cheese on top carrot, celery sticks and tortilla chips.

Salsa Chicken (Slow Cooker)


I know this dish probably doesn't look that appetizing but you have trust me on this one. In fact, I think you should bookmark this page if you like the following: chicken, Mexican flavors and your slow-cooker. This is the very popular (at least in the food blog world) SALSA CHICKEN!

Who knew chicken breasts + can of cream of chicken soup+ taco seasonings + sour cream could be so good. I know I sure didn't. I had seen this recipe so many times but it just did not sound that appealing. Of course, everyone raved about it, hence it's popularity.

Ingredients:

1 pound boneless skinless chicken breasts
1 can cream of mushroom or cream of chicken soup (I used the cream of chicken)
1 cup salsa
1 package taco seasoning (I used 1 Tbsp of my homemade taco seasoning)
1 cup sour cream
cilantro, for serving (optional) (I also added a little shredded cheddar-jack, black beans and scallion on top)

Directions:

Put chicken, soup, and salsa in slow cooker. Sprinkle taco seasoning over everything. Cook on low for 6 hours. If shredding the chicken, pull the breasts out and shred; return back to slow cooker. Stir in sour cream and heat just until everything is combined.

Classic Chili (Slow Cooker)


I am so excited to share this recipe with you all, for several reasons. Here are 10:

1. It's perfect cold weather food.

2. It is made in a slow-cooker.

3. It's from Weight Watchers.

4. It's only 2 WW Points per serving on the old points system. Not sure how many on Points Plus but I bet it is still low. Visit the source of recipe for nutritional info. Click HERE.

5. It uses many pantry staple ingredients.

6. It makes great leftovers.

7. It's budget friendly.

8. Classic recipe and flavor the should appeal to all members of the family.

9. It's low in fat, high in fiber and gluten free!!

10. It tastes really, really great! Really!!

I love the color of the ground beef and peppers... just cooking away :)



I served this dish up with mini low-fat corn muffins. Total comfort food.



Ingredients:

1 lb extra lean ground beef or 1 lb ground turkey
1 tablespoon minced fresh garlic
1 large red bell pepper, seeded and diced
1 large green bell pepper, seeded and diced
2 tablespoons chili powder
2 teaspoons cumin
1 (28 ounce) can crushed tomatoes
1 (15 ounce) can red kidney beans (rinsed and drained)
1 sweet onion, chopped
1/4 cup canned diced chilies or 1 fresh jalapeno pepper, seeded and finely chopped
2 tablespoons tomato paste
1/2 cup-1 cup water (optional)
Sour Cream (optional)
Cilantro, chopped (optional)

Directions:

1. Cook the ground beef and garlic in a nonstick skillet breaking apart the meat with a spoon until well browned; drain off any fat very well, then return to skillet.
2. Add in the bell peppers; cook until softened (about 5 minutes).
3. Add in the chili powder and cumin and stir to coat.
4. In the slow cooker, mix together tomatoes, beans, sweet onion, chilies and tomato paste, then stir in the beef mixture.
5. Cover and cook on HIGH until flavors are blended (about 4-5 hours). If your chili looks too think at the end, feel free to add some water to thick it out a bit.
6. Serve with dollop of light sour cream and chopped fresh cilantro.

White Bean Chicken Chili (Slow-Cooker)


I have a love/hate relationship with my Crockpot. I love the convenience of having a hot meal ready at the end of the day but I hate the fact that I still don't have many recipes I love to make in it.*

This creamy white bean chicken chili is the exception of course. This chili is really, really good and so perfect now that the weather is starting to cool down. I know I'll be making this a lot this winter....YUM!!

Ingredients

1 pound boneless, skinless chicken breasts, cut into 1/2-inch cubes
1 medium onion, chopped
1 1/2 teaspoons garlic powder
1 tablespoon oil
2 cans (15 1/2 ounces each) Great Northern Beans, rinsed and drained
1 can (14 1/2 ounces) chicken broth
1-2 cans (4 ounces each) chopped green chilies (I'm a wimp and only used 1 can)
1 teaspoon salt, divided
1 teaspoon ground cumin
1 teaspoon dried oregano
1/2 teaspoon pepper, divided
1/4 teaspoon cayenne pepper
1 cup sour cream (I used reduced fat)
1/2 cup whipping cream

cilantro, chopped (to garnish)
paprika, (to garnish)

Directions:

1. Season the chicken with half the salt and half the pepper.

2. Then, in a large saucepan, saute chicken, onion and garlic powder in oil for 3-4 minutes.

3. Add the chicken mixture to your slow-cooker. Add beans, broth, chilies and seasonings to slow-cooker as well. Cook on low for 4 hours.

4. After 4 hours, shred the chicken with a fork and stir in sour cream and whipping cream, let cook for another 15 minutes on low.

5. Garnish with fresh cilantro and a sprinkle of paprika, if desired. Serve immediately. This is especially good served with tortilla chips.

Makes about 6 servings.
