Tortellini with Prosciutto and Peas



Here is a deceptive meal. It looks like it is very fattening...but it's not. It looks like it takes a while to cook...but it doesn't. I found this dish in the Make it in Minutes cookbook by Weight Watchers and have made it a few times already. It is always a hit. The milk and flour make the cream sauce but don't add the fat that a traditional Alfredo sauce does. Also, it cooks in only 20 minutes and requires very minimal prep...that alone earns it some big bonus points in my book.


Ingredients
Makes 4 servings

1/2 pound fresh cheese tortellini
1/2 cup grated Parmesan cheese
1 cup whole milk
1/2 tsp black pepper
1 cup frozen green peas
2 Tbsp all-purpose flour
1/4 pound prosciutto (chopped)


Cook tortellini according to pkg. Stir in peas during the last two minutes.
Meanwhile, coat large skillet over medium heat with cooking spray and cook prosciutto 2-3 minutes, until browned. Remove and reserve. Dissolve flour in milk and add it to the skillet. Stir constantly until thickened about 8-10 minutes. Then remove from heat, add Parmesan, pepper, prosciutto, tortellini and peas. Toss to coat and serve
